"COUQUES" OF DINANT V. COLLARD

The "couque de Dinant" is a hard, golden-brown biscuit made from flour and honey. The secret of its making lies in the baking, which is the supreme skill of the master "couquier", heir to a centuries-old tradition. Couques are made in an impressive array of decorative shapes which each master couquier produces using his collection of cutters and wooden moulds. The "couque de Rins" is a sweeter and softer version.
